These homemade pumpkin cookies are topped with an easy maple syrup frosting! These soft-baked pumpkin cookies will bring the perfect hint of fall to your day.
Preheat oven to 350F and line a cookie sheet with parchment paper.
In a mixing bowl, cream the butter and sugars together until smooth. Add the egg and vanilla and combine. Add the pumpkin puree and combine until incorporated.
In a separate bowl, whisk together all the dry ingredients and spices. Add the dry ingredients to the wet and combine.
Scoop 2 tablespoon balls of the cookie dough onto the cookie sheet. Bake for 14-15 minutes. Remove from oven and place on a cooling sheet.
Prepare the frosting by combining all the ingredients in a mixing bowl with a hand mixer. If the frosting is too runny, add in 1 tablespoon of powdered sugar at a time. If it’s too thick, add in 1 teaspoon of milk at a time.
