Why Are They Removing the Seeds From Our Food?
Seedless fruit is a scam, and we made it possible.
Seedless grapes, seedless watermelon, seedless citrus... almost every fruit at the grocery store has been bred to remove the one part that actually makes it a plant.
I only started noticing this when I went to buy grapevines for my garden and saw "seedless" listed as the top selling point on nearly every variety. Growing up, I would have picked seedless every time. Now I deliberately look for seeded ones, and this episode is about why that changed.
Seeds carry the plant's genetics, the nutrients we're told to supplement with, and the option to grow food again next year without buying anything new. Grape seed extract is sold in capsules while the grapes themselves are engineered to remove the same seed those capsules come from. That contradiction runs through the whole food system.
Heirloom and traditional varieties don't get banned. They get replaced when shoppers stop buying them, growers stop planting them, and nurseries stop stocking them. A variety can disappear without anyone deciding to remove it.

Most grapes at the grocery store are seedless. Watermelons are increasingly seedless. Citrus varieties are bred to contain fewer seeds, and many of the fruits people eat every week now come in forms designed to make the seed almost disappear entirely. At first glance, that sounds like nothing more than convenience.
Seeds can be annoying. They get stuck in your teeth, kids complain about them, and nobody wants to stop every few bites to spit something out. But once you really start paying attention to how much of our food has been altered specifically to remove the seed, it raises a bigger question: why have we been taught to see the reproductive part of the plant as something undesirable?
For most of human history, fruit came with seeds because that is simply how fruit works. Grapes had seeds. Watermelons had seeds. Citrus had seeds. Families grew crops, saved seed, traded varieties, selected the strongest plants, and passed those varieties down through generations. Somewhere along the way, however, the priorities shifted. Instead of asking only which varieties tasted best, reproduced well, or adapted locally, modern food production increasingly began rewarding crops that were easier to transport, easier to standardize, easier to market, and easier for consumers to eat.
In this episode, I want to dig into why seedless fruit became so common, what we may be losing as traditional seeded varieties become less common, and why I find it interesting that compounds naturally found inside things like grape seeds are now extracted, bottled, and sold back to us as supplements.
I also want to talk about why growing my own food completely changed the way I look at something as small as a seed, because once you understand the entire growing cycle, the seed stops looking like an inconvenience and starts looking like the beginning of everything.
This is not about saying nobody should ever eat a seedless grape again, and it is not about pretending every old variety is automatically better. It is about asking what happens when convenience becomes one of the biggest forces deciding what our food looks like and which varieties continue to be grown.

I really started thinking about this when I decided I wanted to plant grapes. I began looking through nurseries, comparing different varieties, and I kept seeing the same selling point over and over again: seedless. It was almost always presented as an obvious advantage. Seedless grapes were easier to eat, easier to sell, and more desirable to the average customer. I understood the appeal because I grew up thinking the exact same thing. If I had a choice between grapes with seeds and grapes without seeds, I would have picked the seedless ones without thinking twice.
But this time I found myself doing the opposite. I specifically wanted seeded grapes, and that made me realize how strange our relationship with seeds has become. The seed is the part of the plant carrying the genetic information needed to create another plant, yet we have turned it into something people often view as a flaw. Seedless is printed on packaging like it is an upgrade, and most of us never stop to ask why removing the part responsible for reproduction became such a desirable trait.
A big part of the answer is simply how modern food production works. Food today may need to be picked before peak ripeness, sorted, packed, shipped long distances, stored in warehouses, displayed in grocery stores, and still look appealing when it reaches the customer. That creates a different set of priorities than a family growing food for itself. Shelf life matters. Uniformity matters. Appearance matters. Ease of harvest matters. Consumer preference matters enormously.
None of those things are automatically bad. Farmers need crops they can sell, and people naturally prefer food that is pleasant and easy to eat. The issue is what happens when those preferences start determining which varieties continue to exist in ordinary circulation. A tomato that survives shipping may outperform a tomato that tastes incredible but bruises easily. A seedless grape may dominate simply because most shoppers do not want to chew around seeds. Eventually, older varieties can become harder to find without anyone ever making a conscious decision to get rid of them.
That is what I think is worth noticing. A variety does not have to be banned to disappear. People simply stop buying it, growers plant less of it, nurseries carry fewer plants, and eventually something that used to be common becomes a specialty variety that you have to deliberately search for. This is one reason heirloom and traditional varieties matter so much. They preserve genetics and characteristics that may otherwise quietly fall out of circulation.
The grape example becomes even more interesting when you look at what is actually inside the seed. Grape seeds naturally contain compounds known as proanthocyanidins, often shortened to OPCs, along with other polyphenols and antioxidant compounds. Those compounds are one reason grape seed extract became a commercial product in the first place. Today you can find grape seed extract in capsules, powders, and skincare products because manufacturers want to isolate and concentrate compounds naturally found in that tiny seed.
And this is where the situation starts to feel almost ridiculous. We spent years making seedless grapes more desirable because people did not want the inconvenience of seeds, and then we turned around and began extracting compounds from grape seeds and selling those compounds separately. You can buy a bag of seedless grapes and then go buy grape seed extract because someone decided there was value in the part we no longer wanted inside the fruit.
The seed was annoying when it was naturally sitting inside the grape. Once it was processed, concentrated, put in a bottle, and marketed separately, it suddenly became desirable. That pattern is not unique to grapes either. We do versions of this all over the modern food system. We take whole foods, separate them into components, remove certain parts for texture, shelf life, or convenience, and then later sell isolated nutrients or components from those same foods as separate products.
Refined grains are an obvious example. Whole grains naturally contain the bran and germ along with the starchy part of the grain. Processing can remove some of those portions to create a softer texture or longer shelf life, and then certain nutrients may be added back through enrichment or fortification. We take something that existed together naturally, break it apart, and then spend additional effort rebuilding pieces of it.
That is the broader pattern I find interesting. We increasingly treat food like a product that can be redesigned around convenience rather than a biological system with different parts that each serve a purpose. Seeds are too hard, remove them. Bran changes the texture, remove it. Bones are inconvenient, sell boneless cuts. Skin is inconvenient, remove it. Then later we discover uses for the very parts we discarded.
But the value of a seed goes much deeper than whatever compounds are inside it. A seed represents reproduction, and historically that meant a degree of independence. For most of agricultural history, seed saving was simply part of growing food. A family planted beans, harvested them, saved some for the following season, and planted them again. If one plant handled drought better than the others, they might save seed from that one. If another produced especially good fruit, that line might be kept going.
Over generations, those choices created varieties adapted to particular regions and conditions. One variety might mature quickly enough for a short growing season. Another might tolerate heat. Another might resist a disease. Another might store exceptionally well. Those differences mattered because agricultural diversity gave people options when conditions changed.
That is why seed banks and seed preservation organizations exist today. Seeds are not just future plants; they are stored genetics. A rare variety may carry a trait that seems unimportant now but becomes incredibly valuable later. Once a variety disappears completely, you cannot simply recreate generations of selection and adaptation because you suddenly decide you want it back.
Growing my own food made this feel much more real to me. When your food only comes from the grocery store, you mostly see the finished product. A tomato is sitting in a produce bin. Grapes are already bagged. A cucumber is ready to eat. You do not see the seed germinate, the plant grow, the flowers appear, the pollinators arrive, the fruit form, and then another generation of seeds develop inside that fruit.
Once you see that cycle for yourself, a seed stops looking disposable. One tiny seed can become a plant that gives you pounds of food, and that plant can then produce dozens or hundreds more seeds. A few envelopes in a drawer can represent an entire future garden. It is difficult to look at seeds as useless once you understand what they can become.
I also think this connects to a larger disconnect between people and agriculture. Many people do not know when common fruits and vegetables are naturally in season because grocery stores make almost everything available year-round. Plenty of people have never seen potatoes growing underground, Brussels sprouts growing on a stalk, or asparagus emerging from the soil.
Our food system is incredibly efficient at delivering finished products, but that efficiency can hide almost every part of the process that came before them.
Traditional food skills worked differently because people had to interact with the entire process. They saved seed because they needed seed for the next year. They preserved fruit because it was abundant for a short season and then gone. They made broth because they had bones.
They rendered fat because it was useful. They canned, dried, salted, fermented, and stored food because those skills allowed them to stretch a harvest beyond the season in which it was produced.
Convenience changed that. Again, convenience is not automatically bad, but one of its hidden costs is that knowledge can disappear when nobody needs it anymore. If somebody else handles every step of producing, preserving, and preparing your food, you do not need to know how to do those things yourself. Within a few generations, skills that were once ordinary household knowledge can start feeling specialized.
I experience that constantly as a first-time homesteader. There are things I have had to deliberately learn that people living closer to the land would have simply grown up knowing.
How do you save seed correctly?
Which plants cross-pollinate?
How do you preserve a large harvest?
When is a crop actually ready?
How do you store food through winter?
The fact that so many of us have to relearn these things shows how quickly practical knowledge can disappear when a system makes it unnecessary.
That is why I care about heirloom and seeded varieties now. It is not because every traditional plant is superior or every modern variety is bad. I care because I want the alternatives to remain available. Preserving diversity preserves options, and options are a major part of resilience.
You do not need a giant seed vault to participate in that. You can start with one crop. Grow an open-pollinated tomato you love and save the seed. Let beans mature completely and keep some for the next season. Learn which plants are easy to save seed from and which ones require more planning. Even doing that with a single variety changes the way you see your garden because it no longer has to begin with a purchase every spring.
You start thinking beyond the current harvest. Which plant performed best? Which one handled the weather? Which one tasted better? Which one stayed healthier? Those observations can influence what you grow next year, and suddenly you are participating in the same basic process people used for generations to maintain and improve the varieties they depended on.
That is ultimately why the seedless grape interests me. It is not because the grape itself is some giant crisis. It is because it is such a simple example of what happens when convenience becomes powerful enough to shape the food supply. If seeded and seedless varieties both continue to exist, people have choices. But if the traditional version gradually disappears because it is less commercially convenient, then we have lost an option without necessarily realizing it was happening.
Homesteading has made me realize that independence is often built from small things like that.
Can you grow something yourself? Can you save part of it and plant it again? Can you preserve what is abundant? Can you cook from basic ingredients? None of those skills makes someone completely independent, but each one gives you another option besides depending entirely on somebody else.
Seeds represent that idea almost perfectly. Something small enough to hold between two fingers can become next year’s food. So the next time you walk through the grocery store and see “seedless” printed across a bag of grapes or a watermelon sign, you do not need to panic or stop buying it. Just notice it. Ask which qualities we are selecting for in our food, and ask which qualities may be quietly disappearing because they no longer fit what the modern consumer expects.
Because the grape seed we decided was inconvenient is still valuable enough to extract, concentrate, bottle, and sell back to us. A traditional variety that is commercially inconvenient may still contain genetics worth preserving. And a seed that looks like something to spit out can contain the beginning of an entire future harvest.
Maybe the seed was never the useless part.
Maybe we simply forgot what it was for.
