Nothing makes me happier than an easy delicious dessert, and that dessert is strawberry rhubarb cobbler! This is definitely a summer dessert that is easy to throw together and perfect to pair with ice cream.

I have rhubarb growing in my garden, and it is like a field of rhubarb out there. I’ve been sharing with neighbors and baking up different treats with the rhubarb and I finally hit the jackpot with this tasty rhubarb cobbler that has a strawberry-lined middle filling. IT IS SO GOOD! My neighbors brought me two gallons of strawberries, so when life gives you strawberries, you make a strawberry dessert, right?

To me rhubarb gives a bit of a sour tang to desserts it is included in, and I love it! There is a reason there are so many rhubarb recipes out there—because it is tasty by itself and because it pairs so well with so many different fruits. Rhubarb is more common in the north, but you can purchase it in some grocery stores in the south. I am happy to live where rhubarb is abundant. Growing up, my town would actually hold a rhubarb festival where you would bring your largest rhubarb leaf and compete for prizes while eating all kinds of delicious rhubarb desserts.

How do you make strawberry rhubarb cobbler?

Easily! Start by lining the baking dish with the chopped rhubarb.

Rhubarb

Make the gooey strawberry center by tossing the sliced strawberries in the sugar and cornstarch and allowing this mixture to sit and the juices to escape the strawberries. Add in the vanilla to the strawberries.

After allowing the strawberries to sit for 10 minutes, pour the mixture over the rhubarb. During that ten minutes, make the crust by combining flour sugar, baking powder, and salt in a bowl. In a separate bowl, mix together the melted butter, milk, egg, and vanilla. Fold in the wet ingredients into the dry until just combined then spread out over the top of the strawberries and rhubarb. Baking at 350F for 60-65 minutes until golden brown!

This strawberry rhubarb dessert pairs perfectly with a vanilla bean ice cream or a whipped cream. When it is fresh out of the oven, it is warm and gooey and the ice cream melts right into it and the flavors mix together. It is so delicious! Let’s get baking!

Ingredients
  

Strawberry Rhubarb Filling:

  • 4 cups rhubarb chopped
  • 4 cups strawberries sliced
  • 3/4 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract

Cobbler Crust:

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 1 stick cup butter, melted
  • 3/4 cup milk
  • 1 egg
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350F. Grease the bottom and sides of a 9x13 baking dish.
  • Chop the rhubarb and slice the strawberries. Cover the bottom of the pan with the chopped rhubarb.
  • In a mixing bowl, coat the strawberries with cornstarch, sugar, and vanilla. Allow to rest for 10 minutes to extract the juices from the strawberries.
  • While the strawberries are resting, start the cobbler crust by mixing together the flour, sugar, baking powder, and salt. In a separate mixing bowl, combine the butter, milk, egg, and vanilla extract. Slowly pour the wet ingredients into the dry and fold to incorporate until just combined.
  • After the strawberries have sat, pour the mixture over the rhubarb and spread the crust over the top of the strawberries.
  • Bake for 60-65 minutes until golden brown.
