Do you love having one-pot meals?

I DO! I enjoy making a tasty crockpot dinner—putting all the ingredients into the crockpot in the morning, forgetting about it all day, and then enjoying a delicious dinner in the evening.

I’ve started eating meat again (I was vegetarian for a decade), so I’m trying various cuts of meat now! This past week I made a "GubPa special"—aka a crockpot roast. It's been years since I tasted this savory crockpot recipe, and I craved it. Vegetables melting together throughout the day, soaking up the juices of the roast, and the aroma of this dish—yum. I purchased a chuck roast from a local farmer, sourced the recipe from GubPa, gathered vegetables at a local market, and got down to crock-pottin’.

How do you make a crockpot roast?

For this easy crockpot dinner recipe, you need carrots, parsnips, onions, garlic, potatoes, salt, pepper, Italian seasoning, water, and a roast.

To make this crockpot roast, place the roast in the middle of the crockpot; then chop up your vegetables. To make this recipe even simpler, use baby carrots and skip chopping carrots! I used whole smashed garlic cloves, but you don’t have to. I love the taste of garlic and the flavor it brings to any dish. Surround the roast with vegetables, add a cup of water, sprinkle on seasonings, put on Low, and let it cook for 5 to 6 hours!

When the roast is done, it will be tender and the vegetables soft and delicious! They will truly melt in your mouth. After a decade as a vegetarian, eating roast was an adventure—I didn’t care for big bites, but I discovered that shredding the meat into slivers and then combining it with vegetables created a combination that tastes AMAZING! The flavors create a delicious meal. I experimented with different sauces and found that I enjoy adding ketchup and mustard to the meal. Sounds weird, I know, but it was great!

How do you make A1 sauce?

This dish is typically eaten with A1 sauce. You can make homemade A1 sauce with 3/4 cup Worcestershire sauce, 2 tablespoons ketchup, 2 teaspoons soy sauce, and 1/2 teaspoon of salt. It's that simple. If you add any of these to your end roast dish, you will enjoy the flavor!

Ingredients
  

  • 1 chuck roast
  • 1 package baby carrots (or 2 medium carrots, chopped)
  • 1 parsnip, chopped
  • 8 cloves garlic, diced or smashed whole
  • 1 sweet onion, chopped
  • 1 cup water
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp Italian seasoning

Instructions
 

  • Place the roast in the center of the crockpot.
  • Chop the vegetables and surround the roast with the vegetables.
  • Add in the cup of water and seasonings.
  • Place the lid on top of the crockpot and cook on Low for 5 to 6 hours or High for 3 to 4 hours.
  • Enjoy when the roast is done and the vegetables are soft and tender!
