I was recently craving the flavor of pumpkin dessert. I already had some homemade pumpkin bars, so I thought why not make some soft pumpkin cookies? Pumpkin cookies are magical because they always turn out so dang soft and chewy! I believe it’s the moisture in the pumpkin. Whatever the reason, homemade pumpkin treats are forever welcome in my kitchen!
I’ve made several different pumpkin cookies: pumpkin chocolate chip cookies, oatmeal pumpkin cookies, pumpkin sugar cookies, and pumpkin snickerdoodles. This easy pumpkin cookie recipe is my first frosted pumpkin spice cookie. This isn’t any ordinary frosting; it’s a homemade maple frosting! Maple and pumpkin pair perfectly to create that warm fall feeling of leaves falling and winter approaching. I used pure maple syrup, so it gave the butter frosting the perfect soft hint of maple.
This recipe calls for a variety of spices: allspice, nutmeg, ground cloves, and cinnamon. These create the deep spiced pumpkin flavor in the cookies. If you don’t have one or two of these, that’s okay. Compensate by adding more of the other spices. Each spice adds its unique flavor so add more or less depending on your preference. I love the health benefits of cinnamon, so why not maximize it in this spicy cookie recipe?

Maple Frosted Pumpkin Spice Cookies
Ingredients
Cookies:
- 1/2 cup butter (1 stick), softened
- 1/4 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 tsp vanilla
- 1/2 cup pumpkin puree
- 1/2 tsp all spice
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups all-purpose flour
Maple Frosting:
- 1/2 cup butter (1 stick), softened
- 1/3 cup maple syrup
- 1/2 tsp vanilla
- 1 1/2 cups powdered sugar
- 2 tsp milk
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment paper.
- In a mixing bowl, cream the butter and sugars together until smooth. Add the egg and vanilla and combine. Add the pumpkin puree and combine until incorporated.
- In a separate bowl, whisk together all the dry ingredients and spices. Add the dry ingredients to the wet and combine.
- Scoop 2 tablespoon balls of the cookie dough onto the cookie sheet. Bake for 14-15 minutes. Remove from oven and place on a cooling sheet.
- Prepare the frosting by combining all the ingredients in a mixing bowl with a hand mixer. If the frosting is too runny, add in 1 tablespoon of powdered sugar at a time. If it’s too thick, add in 1 teaspoon of milk at a time.
- Frost the cooled cookies and enjoy!
